Just for fun!

I recently experimented with a new pancake recipe and I want to share!


1 Egg

1 tsp Vanilla

¾ C Vanilla Unsweetened Almond Milk

¼ C Avocado Oil

Mix well and set aside.

Then combine:

¾ C Whole Wheat Flour

½ Tsp Baking Soda

1 tsp Baking Powder

1 tsp (heaping) Cinnamon

½ tsp Salt

Optional – 1/4 C chopped Walnuts or Pecans

Combine dry ingredients with wet.

Add two scoops Vanilla Protein Powder

(I prefer to use Pea Protein, but Whey will also work so long as it is Vanilla)

Heat Griddle until a drop of water sizzles on it.

Pour batter onto griddle in approx. 4” circles.

Turn when batter bubbles on top.

Serve with Greek Yogurt, Agave Nectar (or Maple Syrup) and Fruit.

These were delicious and filling. And, the added protein powder offset the carbs. I hope you’ll give it a try! Let me know!

  1. Sounds and looks delicious, Jan! 😀😀 Especially topped with Greek yogurt and the blueberries! I love the American pancakes, much smaller than the Swedish ones and slightly thicker but oh, so tasty! I’ll see if I can make these!
